Nothing is better than whizzing together a handful of ingredients and end up with something super-flavorful that helps you focus on eating to live!

This Berry Beet Dip is as easy as it gets and uses some serious nutrient-packed ingredients.  You’re going to want to start by making a batch of this Berry Bliss Sauce.

After that it’s smooth sailing with raw sunflower seeds, a couple of Medjool dates and a very optional, special ingredient…

What can I say?  When the kids are at school I happily wander the isles of Whole Foods looking for new things to try.

And then I found this beet powder.

I grabbed it to use in smoothies and popscicles.

Beet powder is slightly sweet, with that very recognizable earthy beet-taste.  It adds a similar boost of nutrients as whole beets, things like: antioxidants, fiber, calcium, iron, potassium, folate, manganese and nitrate.  One teaspoon of beet powder is equivalent to one beet.

Now we’re all nutritarians here (or trying to be) and we know the best way to eat a beet is in its most natural form.  But at Dr. Fuhrman’s recent Culinary Getaway Chef James Rohrbacher let us in on a little secret: powdered fruits and veggies add flavor to our nutritarian recipes! 

The truth is this beet powder sat in my pantry for a few weeks before I realized I had the perfect way to break it in…

See the Berry Bliss Sauce blended with the dates and sunflower seeds kinda made a brown dip.

And, if you’ve been around here a while you might have noticed that I don’t really dig brown food.

Yes, even my mushrooms (which I eat daily) are slathered with this sauce or covered in fresh herbs!

What can I say?  I’m just OCD like that 😉

The good news is I spend a good deal of time on Instagram and I’ve noticed that gorgeously-hued smoothies and treats are “colored” using natural plant powders.

Now, this is completely optional!  If you don’t have it, you don’t want to have it, or don’t mind the natural color of this dip, then you are going to have a mighty-yummy Berry Dip that you’re going to love!

If you do opt to add the powder please know that it will have an-ever-so-slight beet flavor–nothing overpowering but certainly “there-at-the-end.”

This dip is phenomenal with fresh sliced apples, strawberries, and blackberries!

My 8-year-old and 4-year-old gobbled it up (beet powder and all) because it makes fresh fruit just a little bit more special and festive!

I stored it in a glass Mason jar and it kept great for 10 days!

Beet Berry Dip

The perfect nutritarian dessert dip for fresh summer fruit!

Ingredients

  • 1 cup Berry Bliss Sauce
  • 1/4 cup sunflower seeds, raw & unsalted
  • 2 Medjool dates, pitted
  • 2 tsp. beet powder (optional)

Instructions

  1. Make a batch of Berry Bliss Sauce

  2. Add 1 cup Berry Bliss Sauce with the sunflower seeds, dates, and beet powder (optional) into a high-speed blender.

  3. Blend on high for about a minute or until smooth and creamy. 

Recipe Notes

Makes about 1 1/2 cups. 

Best served chilled. 

Keeps in a glass jar in the fridge for up to 10 days.
